Tacos don’t just have to be delicious—they can also be vibrant and nutrient-packed without any artificial dyes. Using a variety of colorful vegetables in your taco fillings not only makes for a visually appealing dish but also delivers a variety of vitamins and minerals.


Recipe: Rainbow Veggie Tacos



Ingredients:


• 4 small corn or whole wheat tortillas


• 1/2 cup shredded purple cabbage


• 1/2 cup sliced red bell pepper


• 1/2 cup sliced yellow bell pepper


• 1/2 cup grated carrots


• 1/2 avocado, sliced


• 1/4 cup fresh cilantro, chopped


• 1 tbsp lime juice


• Salsa (optional)


• Salt and pepper, to taste


Instructions:


• Warm the tortillas in a skillet or microwave for 20-30 seconds.


• In a small bowl, mix the cabbage, red and yellow bell peppers, and grated carrots. Add the lime juice, salt, and pepper and toss to combine.


• Place the veggie mixture on each tortilla, then top with avocado slices, cilantro, and salsa if desired.


• Serve immediately and enjoy the crunch, color, and freshness!
