Low-Carb Zucchini Noodles with Garlic Shrimp

2 medium zucchinis

1 lb (450g) large shrimp, peeled and deveined

1 lemon (zest and juice)

Salt and black pepper to taste

Fresh parsley or basil for garnish



Instructions


Prepare the Zucchini Noodles

Use a spiralizer or julienne peeler to turn the zucchinis into noodles. Set aside.


Cook the Shrimp

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the shrimp, season with salt and pepper, and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.


Make the Garlic Sauce

In the same skillet, heat the remaining olive oil.

Add the minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.


Combine

Add the zucchini noodles to the skillet, tossing them gently to coat in the garlic sauce. Cook for 2-3 minutes, just until warmed through (avoid overcooking to keep them crisp).

Return the shrimp to the skillet and toss with the noodles. Add lemon zest and juice for a fresh, tangy flavor.


Serve

Divide into bowls, garnish with fresh parsley or basil, and enjoy immediately!
